Zucchini Bread
Ingredients:
4 cups oat flour
4 teaspoons baking powder
1 teaspoon baking soda
2 teaspoon cinnamon
6 eggs
2 teaspoons vanilla
1 1/2 cups honey
4 cups pureed zucchini
1/2 cup safflower oil
1 cup finely chopped walnuts (optional)
1.) Preheat oven to 325o F.
2.) Peel and slice the zucchini and place in a food processor. Combine all the remaining ingredients and stir together before adding the pureed zucchini. Place in a lightly greased loaf pan or a muffin pan lined with cupcake papers.
3.) Bake for 20-25 minutes. Bread is cooked when a toothpick inserted in the center comes out clean. Cool completely on a wire rack, before storing in an airtight container in the refrigerator.
