Veggie Casserole


 

Ingredients:
 
2 cups chopped cauliflower
2 cups chopped broccoli
2 cups chopped carrots
2 cups chopped green beans
2 tablespoons olive oil
1 teaspoon black pepper
4 tablespoons grated Parmesan cheese
 
1.) Steam the vegetables in a pan over medium heat.  Add the olive oil and pepper, stir, reduce the heat and simmer for 10 minutes.
 
2.) Pour into a serving container, draining off the excess water.  Sprinkle the cheese over the top, and allow to cool before serving.
