Turkey and Sweet Potatoe Skewers
Ingredients:
2 turkey breasts
2 sweet potatoes, boiled and cooled
2 tablespoons canola oil
1 apple, peeled and cut into chunks
2 tablespoons orange juice
2 tablespoons barbecue sauce
2 tablespoons orange marmalade
4 tablespoons organic chicken broth
1.) Cut turkey into cubes and place in a bowl. Peel and cut the sweet potatoe into chunks, toss with the turkey and canola oil. Add the apple and orange juice and let sit for 20 minutes.
2.) Preheat the broiler. Place turkey, apples and sweet potatoes on a skewer. Spray a foil-lined pan with cooking spray and broil for 4 minutes on each side.
3.) Brush the skewers with the barbecue sauce and marmalade, return to the oven for 5 minutes longer on each side.
4.) When the skewers are cool, break the turkey in to bite-sized pieces and break apart the potatoes and apples. Serve over dry kibbles with 4 tablespoons chicken broth.
