Tuna & Vegetable Cakes


 
 
Ingredients:
 
2 cans chunk white tuna, packed in water
2 slices whole-wheat bread
4 tablespoons Italian parsley, chopped
2 organic eggs, beaten
1 cup frozen mixed vegetables
4 tablespoons virgin olive oil
4 teaspoons organic chicken broth (if needed)
 
1.) Flake the tuna in a bowl, tear bread and place in food processor to make crumbs.  Fold the bread crumbs and remaining ingredients in a bowl. (except oil) 
 
2.) Heat oil in a pan.  Form tuna mixture into small patties and fry in oil until golden brown on both sides.
 
3.) Flake patties with a fork, mix with broth and serve over kibbles.
