Sweet Potatoe Pie


Ingredients:

 
2 cups oat flour
1 cup brown rice flour
1/2 cup safflower oil
1/2 cup water
2 eggs
 
filling:
 
2 cups cooked mashed sweet potatoe
2 teaspoons cinnamon
2 tablespoons honey
2 teaspoons ground cloves
2 eggs
 
1.) Preheat oven to 400o F.
 
2.) Cook and mash the sweet potatoes.  Combine all the dough ingredients and mix together.  Roll out to 1/4" thickness and divide into even pieces and press into the bottom of a muffin tin.  Combine all the filling ingredients, and scoop into the crusts.
 
3.) Bake for 15-20 minutes or until a nice golden brown.  Store in an airtight container in the refrigerator.
