Short Ribs


 

Ingredients: 
 
2 tablespoons virgin olive oil
4 cloves garlic, chopped
4 tablespoons unbleached flour
4 pounds short ribs
4 carrots, chopped
1 cup sliced apple
4 cups organic beef broth
2 tablespoons molasses
 
1.) In a pan heat the olive oil and saute the garlic until brown.  Spread the flour on a waxed piece of paper and coat the short ribs.  Raise the heat in the pan and saute the ribs until they have a nice brown crust.
 
2.) Add the carrots and apples, cooking until caramelized.  Add the beef broth and bring to a boil.  Cover, lower the heat and simmer for 1 hour stirring a few times.  Add the molasses and cook until it begins to bubble
 
3.)  Remove the short ribs, and when they are cool enough to touch remove the meat from the bones.  Place the meat back into the pot and stir.  Serve over dry kibbles.
