Seafood Dishes: Fish Stuffed with Corn
Ingredients:
4 tablespoons unbleached flour
12 ounces any white fish
4 tablespoons virgin olive oil
1 cup fish and chip biscuits (in biscuit section)
1/2 cup frozen corn niblets
2 cloves garlic, chopped
1/2 cup organic chicken broth
1.) Preheat oven to 350o F.
2.) Roll the fish in the flour to coat. Heat 2 tablespoons olive oil in a pan and saute the fillets before placing in a baking dish.
3.) Break biscuits into smaller pieces and stir together with the corn.
4.) Add rest of the oil to the pan and saute the garlic. Add the biscuits and corn mixture and cook another couple minutes. Add the chicken broth and cook until soft. Spread the corn mixture over top of the fillets and bake for 10 minutes.
5.) Break the fillets apart with a fork, add extra broth if needed and serve over kibbles.
