Seafood Dishes: Fish Florentine


 

Ingredients:

 
4 tablespoons unbleached flour
12 ounces any white fish
4 tablespoons virgin olive oil
2 cloves garlic, chopped
1/2 cup frozen chopped spinach
4 tablespoons natural cheddar cheese, grated
4 tablespoons organic chicken broth
 
1.) Preheat oven to 350o F.
 
2.) Roll the fish in the flour to coat.  Heat 2 tablespoons olive oil in a pan and saute the fillets before placing in a baking dish.
 
3.) Add rest of the oil to the pan and saute the garlic.  Add the spinach and cook another couple minutes.  Remove the spinach and mix with the cheese. Spread the spinach mixture over top of the fillets and bake for 10 minutes.
 

4.) Break the fillets apart with a fork, add extra broth if needed and serve over kibbles.
