Savory Bacon, Cheddar, and Oatmeal Biscuits - Rolled Cookies
Ingredients:
4 cups rolled oats
1 cup unbleached flour
4 teaspoons baking powder
1 cup natural cheddar cheese, grated
2 tablespoons Romano cheese, freshly grated
4 pieces nitrate-free bacon, cooked until crumbly
4 tablespoons canola oil
1/2 cup filtered water
1.) Preheat oven to 325o F.
2.) Measure all of the dry ingredients into a mixing bowl and stir until combined. Add the grated cheese and bacon and continue stirring until mixed together.
3.) Make a well in the center of the dry ingredients and add the canola oil. Mix on medium speed until the mixture is crumbly. Add the water and mix until all ingredients are thoroughly combined and a dough forms. Turn the dough out on to a lightly floured surface and knead until the dough is soft. Roll the dough 1/4 inch thick and cut the biscuits with your cookie cutters.
4.) Place the biscuits on a parchment paper lined cookie sheet and bake for about 12-15 minutes. Turn the oven off and leave the biscuits in for another 20-30 minutes. Remove from the oven and cool them on a baking rack. Store biscuits in an airtight container.
