Salmon Croquettes


 

Ingredients:

 
6 medium potatoes
2 cans salmon (or 1 can tuna & 1 can salmon)
4 tablespoons Italian parsley, chopped
2 organic eggs, beaten
1 cup frozen mixed vegetables
4 tablespoons virgin olive oil
4 teaspoons organic chicken broth
 
1.) Boil the potatoes until soft, mash and place in a bowl.
 
2.) Process the salmon in a food processor, and add to the potatoes.  Fold in the parsley, eggs and mixed vegetables.
 
3.) Heat the olive oil in a pan over medium heat.  Form salmon mixture into small patties and fry in oil until golden brown on both sides. Flake patties with a fork, mix with broth and serve over kibbles.
