Rice Cake
Ingredients:
1 cup canola oil
1 cup brown rice, cooked
1/4 cup sour cream
4 organic eggs
2 cups unbleached flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 cup apple, finely chopped
Cream cheese frosting
1.) Preheat the oven 350o F. Grease and flour two 8-inch cake pans.
2.) In a mixing bowl, cream the canola oil, brown rice syrup and sour cream at medium speed. Add the eggs, one at a time, beating after each addition. Add the thawed blueberries.
3.) Sift the flour, baking soda and cinnamon and then add to the wet ingredients. Beat until combined and then fold in the chopped apples.
4.) Divide the batter between the two pans and bake for 30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool for 10 minutes before transferring to a wire rack to cool completely.
5.) Frost with a thin layer of cream cheese frosting.
