Pumpkin Muffins


 

Ingredients:

 
4 cups oat flour
4 teaspoons baking powder
4 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon ground cloves
6 eggs
1 1/2 cups honey
1/2 cup safflower oil
2 15-ounce cans of pumpkin
 
1.) Preheat oven to 350o F.
 
2.) Combine all the ingredients and mix together completely.  Spoon the mixture into a muffin pan, lined with cupcake papers.  Bake for 22-25 minutes or until a toothpick inserted in the center comes out clean.  Let cool completely on a wire rack before storing in an airtight container in the refrigerator.
