Pizza Biscuits - Fancy Cookies
Ingredients:
4 teaspoons virgin olive oil
6 cloves garlic, chopped
1/2 pound sweet Italian turkey sausage
2 cups unbleached flour
2 cups rolled oats
4 teaspoons baking powder
4 teaspoons garlic powder
1 cup mozzarella cheese, shredded
1 cup Italian gravy (in other section)
1.) In a small skillet saute the garlic in the olive oil over low heat. Remove sausage casing and add to the garlic. Break sausage apart into little crumbs. Cook until the sausage bits are browned and almost crunchy. Allow to cool.
2.) Preheat oven to 325o F.
3.) Measure all of the dry ingredients into a mixing bowl with the mozzarella cheese and stir until combined.
4.) Place the garlic, sausage and oil into a glass measuring cup. Pour the Italian gravy in the sausage mixture and stir with a fork until combined.
5.) Turn the dough out on to a lightly floured surface and knead until the dough is soft. Roll the dough 1/4 inch thick and cut the biscuits with your cookie cutters.
6.) Place the biscuits on a parchment paper lined cookie sheet and bake for about 12-15 minutes. Turn the oven off and leave the biscuits in for another 20-30 minutes. Remove from the oven and cool them on a baking rack. Store biscuits in an airtight container.
