Peanut Butter, Carrot and Wheat Germ Biscuits - Rolled Cookies
Ingredients:
2 cups unbleached flour
1 cup whole-wheat flour
1 cup unflavored wheat germ
4 teaspoons baking powder
1 cup unsalted natural peanut butter (for more crunch use chunky instead of smooth)
1/2 cup grated carrot
1 cup filtered water
1.) Preheat the oven to 325o F
2.) Measure all of your dry ingredients together in a bowl and stir until combined.
3.) Place peanut butter, grated carrot and water in a glass measuring cup, and mix together until it is a creamy consistency.
4.) Make a well in the center of the dry ingredients and pour in the peanut butter and carrot mixture. Using an electric mixer, mix on medium speed until all ingredients are thoroughly combined.
5. Turn the dough out on to a lightly floured surface and gently knead until the dough is smooth. Roll the dough out until it is 1/4 inch thick and cut biscuits into desired shapes with cookie cutters.6. Place the biscuits on a parchment paper lined cookie sheet and bake for about 12-15 minutes or until the biscuits are dry and firm to the touch.
7. Turn the oven off and leave the biscuits in for another 20-30 minutes. Remove from the oven and cool them on a baking rack. Store biscuits in an airtight container.
