Peanut Butter-Berry Buttons - Fancy Cookies


 

Ingredients:

 
2 cups unbleached flour
1 cup whole-wheat flour
4 teaspoons baking powder
4 teaspoons cinnamon
1 cup natural unsalted peanut butter
1/2 cup blueberries, chopped
1 cup filtered water
 
1.) Preheat oven to 325o F.
 
2.) Measure all the dry ingredients into a mixing bowl and whisk until blended together.
 
3.) Combine the peanut butter, blueberries and water in a glass measuring cup, and stir until smooth and creamy.
 
4.) Make a well in the center of the dry ingredients and pour in the peanut butter mixture.   Mix on medium speed until all ingredients are totally combined together.
 
5.) Turn the dough out on to a lightly floured surface and knead until the dough is soft.  Roll the dough 1/4 inch thick and cut into 1 inch round biscuits.  Using a fork, poke the cookies to make the "buttonholes."  
 

6.) Place the biscuits on a parchment paper lined cookie sheet and bake for about 12-15 minutes. Turn the oven off and leave the biscuits in for another 20-30 minutes.  Remove from the oven and cool them on a baking rack.  Store biscuits in an airtight container.
