Peanut Brittle


Ingredients:

 
6 cups brown rice flour
2 teaspoons cinnamon
2 eggs
1 cup honey
1/2 cup molasses
1 cup unsalted peanut butter
1/2 cup safflower oil
2 cups finely chopped unsalted peanuts
 
1.) Preheat oven to 325o F.
 
2.) Place all the ingredients, except peanuts in a food processor until completely mixed into a stiff dough.  Press the dough onto a cookie sheet, place plastic wrap over top and smooth out evenly.  Remove plastic wrap and place peanuts over top. Use a knife to score the dough into pieces and then bake for 30-40 minutes, or until golden brown.  Cool completely, break apart and store in a loosely covered container at room temperature.
