Oatmeal Cookies
Ingredients:
3 cups oat flour
3 cups brown rice flour
2 teaspoons baking powder
teaspoon baking soda
4 cups old-fashioned rolled oats
2 cups finely chopped peanuts
4 eggs
1/2 cup safflower oil
1 1/2 cups unsalted peanut butter
1 cup honey
2 teaspoons vanilla
1.) Preheat oven to 350o F.
2.) Combine all the ingredients and mix completely. Roll into small balls and place on a parchment-lined cookie sheet. Press down on each cookie with the palm of your hand to flatten.
3.) Bake for 18-22 minutes or until edges are a golden brown. Cool and store in a loosely covered container.
