Macaroni & Cheese with Orzo
Ingredients:
4 teaspoons virgin olive oil
4 cloves garlic, chopped
2 cups orzo
2 cups organic chicken broth
2 tablespoons Romano cheese, grated
2 tablespoons natural sharp cheddar cheese, grated
2 tablespoons fresh bread crumbs

1.) Preheat oven to 400o F.
2.) Heat the oil and saute the garlic. Add the orzo and cook for two minutes.
3.) Add the chicken broth and bring to a boil. Boil for 4 minutes, and then do not drain.
4.) Pour the orzo and broth into a casserole dish, mix in the grated cheese and spread the bread crumbs over the top. Drizzle with a little olive oil and bake for 5 minutes until cheese is melted and crumbs are toasty and brown.
