Liver and Peas
Ingredients:
1/2 cup canola oil
1/4 cup cooked liver
1/4 cup sour cream
4 organic eggs
2 cups unbleached flour
2 teaspoons baking soda
1 piece bacon, cooked and crumbled
1/2 cup frozen peas, thawed
Cream cheese frosting
1.) Preheat the oven 350o F. Grease and flour two 8-inch cake pans. 

2.) In a mixing bowl, cream the canola oil, cooked liver and sour cream at medium speed. Add the eggs, one at a time, beating after each addition.
3.) Sift the flour, baking soda and cinnamon and then add to the wet ingredients. Beat until combined and then fold in the bacon and peas.
4.) Divide the batter between the two pans and bake for 30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool for 10 minutes before transferring to a wire rack to cool completely.
5.) Frost with a thin layer of cream cheese frosting.
(you can decorate the cake with peas, like you would nuts if desired)
