Italian Gravy


 

Ingredients:

 
2 tablespoons virgin olive oil
4 cloves garlic, chopped
1/2 cup carrot, finely chopped
2 cups crushed tomatoes
4 tablespoons Italian parsley, chopped
1 cup pasta, cooked
2 teaspoons Romano cheese, grated (optional)
 
1.) Heat the olive oil in a pan and saute the garlic.  Add the carrots and cook until caramelized.
 
2.) Add the crushed tomatoes and continue cooking, then add the parsley.
 
3.) Place the cooked pasta in the food processor and pulse until chopped.  Add the pasta to the gravy and serve over kibbles.  Sprinkle with the freshly grated Romano cheese if you want.
