Grilled Chicken with Pears and Wild Rice
Ingredients:

8 teaspoons virgin olive oil, separated
4 cloves garlic, chopped
2 cups wild rice
4 cups organic chicken broth
2 chicken breasts, cut into slices
2 tablespoons pesto
2 pears, peeled and chopped finely
1.) Heat 4 teaspoons olive oil in a pan, saute the garlic and then add and cook the rice until al dente.
2.) Add the chicken broth and bring to a boil. Cover and simmer for half an hour until broth is completely absorbed.
3.) Heat a grill on medium heat, toss the chicken in the remaining oil and grill until cooked. When cool, break chicken into pieces.
4.) Stir the pesto and chopped pears into the rice. Add the chicken and toss together. Flake the rice with a fork and serve over kibbles, using extra broth if needed.
