Grilled Cheese with Bacon Biscuits


Ingredients:

 
2 cups oat flour
2 cups brown rice flour
1 cup low-fat shredded cheddar cheese
12 slices cooked nitrate-free bacon
2 eggs
1 cup water 
 
1.)  Preheat oven to 350o F. 
 
2.)  Cook bacon and grind them in a food processor. Combine all the ingredients and mix until until a soft dough forms. Roll the dough out to 1/4" thickness and cut into round circles with a cookie cutter or pizza cutter to make into shapes.  Place on an aluminum-lined cookie sheet and bake for 20-25 minutes until browned and cheese begins to bubble.  Cool on a wire rack and store in an airtight container in the refrigerator.
