Egg Strips



 

Ingredients:

 
4 organic eggs
2 tablespoons Romano cheese, grated
2 tablespoons old-fashioned rolled oats
 
1.) Preheat oven to 350o F.
 
2.) Use a fork to scramble the eggs in a glass measuring cup.  Add the cheese and oats.  Stir until combined.
 
3.) In a heated pan cook the egg mixture until dry and cooked through, without stirring.
 
4.) Remove the cooked egg/pancake from the pan and allow to cool slightly.  Using scissors cut the pancake into thin strips. Spread on a parchment-lined cookie sheet.  Bake for 20 minutes until dry and firm to the touch.
 
5.) Store in a plastic bag in the refrigerator for up to one week.
