Cranberry Scones


  

Ingredients:

 
2 cups oat flour
2 cups brown rice flour
4 teaspoons baking powder
2 cups dried cranberries
1 cup unsalted peanut butter
1/2 cup safflower oil
1 1/2 cups water
2 eggs
 
1.) Preheat oven to 400o F.
 
2.) Mix all the ingredients except the cranberries in a food processor.  Once thoroughly combined add cranberries and stir by hand.  Scoop by large spoonfuls onto an ungreased cookie sheet.
 

3.) Bake for 15-20 minutes until a toothpick inserted in the center comes out clean.  Remove and let cool completely before storing in an airtight container in the refrigerator.
