Cranberry Coconut Granola


 

Ingredients:
 
5 cups old-fashioned rolled oats
1 cup unsweetened flaked coconut
1 cup unsweetened dried cranberries, chopped
2 teaspoons cinnamon
1 cup unsalted natural crunchy peanut butter
1 cup organic brown rice syrup
 
1.)  Preheat the oven to 350o F.
 
2.) Whisk the oats, coconut, cranberries and cinnamon together in a mixing bowl.
 
3.) In a glass measuring cup, mix together the peanut butter and syrup until it is a smooth and creamy consistency.
 
4.)  Combine the peanut butter mixture to the oats and mix on medium speed until everything is combined.
 
5.) Press the granola into a parchment-lined jelly-roll pan.  Bake for 15-20 minutes or until it is golden and crispy.  When cool break into small bars or chunks.
