Cornmeal Biscuits
Ingredients:
4 cups unbleached wheat flour
2 cups cornmeal
2 eggs
1/4 cup vegetable oil
4 teaspoons chopped fresh parsley
1 1/2 cups low-sodium chicken broth
1.)Preheat oven to 400o F.
2.) Mix the cornmeal and flour in one bowl. In another bowl whip the eggs with the oil, parsley, and chicken broth. Add to the flour mixture and stir together to form a dough. Knead the dough and roll it out on a lightly floured surface to about 1/2" thick. Cut dough into desired shapes with cookie cutters. Place the biscuits on an ungreased cookie sheet.
3.) Bake biscuits for about 15 minutes and then cool completely before storing in an airtight container in the refrigerator.
