Coconut Creams


Ingredients: 

 
3 cups oat flour
3 cups brown rice flour
2 cups unsweetened shredded coconut
2 teaspoons cinnamon
2 eggs
2 cups goat's milk (or coconut milk)
2 tsp vanilla
 
1.) Preheat oven to 350o F.
 
2.) Combine all the ingredients and mix completely.  Roll into small balls and place on a parchment-lined cookie sheet.  Press down on each cookie with the palm of your hand to flatten.
 
3.) Bake for 18-22 minutes or until edges are a golden brown. Cool and store in an airtight container in the refrigerator.
