Beef Stir Fry with Vegetables


 Ingredients: 

 2 tablespoons virgin olive oil
4 cloves garlic, chopped
12 ounces beef stew meat
4 carrots, finely chopped
1 cup broccoli, finely chopped
1 cup cauliflower, finely chopped
1 cup organic beef broth
1 cup cooked brown rice
 
1.) In a pan heat the olive oil and saute the garlic until brown.  Spread the flour on a waxed piece of paper and coat the stew meat.  Raise the heat in the pan and cook the beef cubes until browned with a nice crust.
 
2.) Add the vegetables and continue cooking, constantly stirring.  Cook until the vegetables are still crisp.  Add the rice and the beef broth.
 

3.) Place 1 cup of the stew into a food processor. Process until it is smooth.  Return the puree to the rice and stew and stir until well mixed.  Serve the stew over kibble, adding more beef broth if it is too thick.
