Beef Pot Roast


 

Ingredients:

 
2 tablespoons virgin olive oil
4 cloves garlic, chopped
12 ounces beef stew meat
4 tablespoons unbleached flour
4 carrots, chopped
4 cups organic beef broth
1 cup sweet potatoe, cooked and mashed
1 cup frozen chopped spinach, thawed
 
1.) In a pan heat the olive oil and saute the garlic until brown.  Spread the flour on a waxed piece of paper and coat the stew meat.  Raise the heat in the pan and cook the beef cubes until browned with a nice crust.
 
2.) Add the carrots and cook until caramelized.  Add the beef broth and bring to a boil.  Lower the heat and simmer covered for 45 minutes, stirring occasionally.
 
3.) Place 1 cup of the stew into a food processor and add the sweet potatoe and spinach.  Process until it is creamy.  Return the puree to the pot and stir until well mixed.  Serve the stew over kibble, adding more beef broth if it is too thick.
