Banana Nut Biscotti
Ingredients:
5 cups oat flour
5 cups brown rice flour
4 teaspoons baking powder
1 teaspoon baking soda
4 eggs
2 teaspoons vanilla
2 tablespoons honey
1/2 cup finely chopped peanuts
1 cup mashed and pureed bananas
a small bowl of water
1.) Preheat oven to 325o F.
2.) Mash bananas and puree in a food processor. Combine all the ingredients in a food processor (or in a bowl) and add 1 tablespoon of water at a time until the dough is a good consistency to work with. Knead the dough together by hand a few times on a lightly floured surface. Separate into four logs and place on an ungreased cookie sheet.
3.) Bake for 30 minutes. Remove form oven and let cool for 10 minutes and then slice the pieces 1/2" thick. Bake an additional 20 minutes and then cool completely on a wire rack before storing in a loosely covered container at room temperature.
