Banana Cookies


Ingredients:

 
3 cups oat flour
3 cups brown rice flour
2 teaspoons cinnamon
2 cups old-fashioned rolled oats
1 cup oat bran
2 eggs
1 cup mashed and pureed bananas
1 cup water
 
1.) Preheat oven to 350o F.
 
2.) Place all the ingredients in a bowl and mix until they are completely combined .  Roll into small balls and place on a parchment-lined cookie sheet.  Press down on each cookie with the palm of your hand to flatten. (They can be close together because they do not spread out)
 
3.) Bake for 18-22 minutes or until edges are a golden brown. Cool and store at room temperature in a loosely covered container.
