Bacon Snickerdoodles - Fancy Cookies


Ingredients:

 
2 cups unbleached flour
2 cups whole-wheat flour
4 teaspoons baking powder
1 cup unsalted natural peanut butter
4 tablespoons carrot, grated
1 cup filtered water
2 organic eggs, beaten
4 pieces bacon, cooked and crumbled
 
1.) Preheat oven to 325o F.
 
2.) Measure all the dry ingredients into a mixing bowl and whisk until blended together.
 
3.) Place peanut butter, grated carrot and water in a glass measuring cup, and mix together until it is a creamy consistency.  Make a well in the center of the dry ingredients and pour in the peanut butter mixture.  Mix on medium speed until well combined.
 
4.)  Turn the dough out on to a lightly floured surface and knead until the dough is soft, and then roll it 1/4 inch thick.  Cut the biscuits into 1 inch cookies with a fluted cookie cutter.
 
5.)  Place the biscuits on a parchment paper lined cookie sheet and brush with some of the beaten egg.  While the cookies are still wet, sprinkle with the crumbled bacon. 
 
6.)  Bake for about 12-15 minutes or until the biscuits are dry and firm to the touch. Turn the oven off and leave the biscuits in for another 20-30 minutes.  Remove from the oven and cool them on a baking rack.  Store biscuits in a cookie tin.
